Lentil Salad

Ingredients (serves about 4)

  • 250 g organic Anicia lentils
  • 1 small red onion or shallot
  • a piece of celery stalk or parsley stalk
  • fresh herbs

 

For the vinaigrette

  • Apple cider vinegar
  • Olive oil
  • Salt
  • Pepper
  • A little cumin (optional)

 

Preparation

  • Cook the organic Anicia lentils for 20–23 minutes without soaking.
  • Drain and allow to cool.
  • Finely chop the onion.
  • Finely chop the celery or parsley stalk.
  • Mix everything with the lentils.
  • Stir in the vinaigrette.

 

For a nutritious and filling meal

 

Variation 1: With vegetables (classic & hearty)

 

Additional ingredients

  • 1–2 carrots, grated or finely chopped

 

Ideal

  • as a side dish
  • on cooler days
  • when you want a more substantial meal

 

Variation 2: Fresh with apple (light, summery & filling)

 

Additional ingredients

  • Dice 1 fresh tart apple and fold it in just before serving.

 

Ideal

  • on warm days
  • for picnics or buffets
  • as a light, fresh meal
